5 on Friday!



It's Friday!! I think Fridays and Saturdays are the best times of the week. Here are my 5 on Friday likable items this week.

{one}

Greek Night! Our family has Greek night once a week. This week the hubby and I hosted Greek night at our house. Hubby smoked a lamb so we stuffed our pitas with lamb but you can use chicken or pork if you do not like lamb.



{two}

I had lunch with a good friend. We work together in the same school and we meet up once a week at Panera. I have to tell y'all, it is not easy going to Panera and meeting up to work on things for the next school year. WE ARE TALKERS! We literally spend hours and most of the time we end up eating lunch and dinner there. We give them good business! :)

{three}

Okay, I have to admit that I hardly splurge on big ticket items for myself. I have had my eye on some aviator polarized Coach sunglasses. Yesterday while I was shopping with the hubby and my SNL (sister-n-law), I just happened to land into the Coach store and found just what I was looking for...take a look at these babies! Yesterday while shopping I also found a rash guard. We stopped into Oceanology and I was looking around when I spotted a pretty blue rash guard. Lets just say the good Lord has blessed me in the chest area and I needed something when I go to the beach. My parents bought a beach house and my brothers, hubby and myself are always partaking in water sports or playing land sports (volleyball, bocce ball, Frisbee, etc.).

Speaking of the beach! We are going this weekend! My aunt and uncle are visiting and it is always great to see extended family. We are also meeting friends for dinner at the the garlic. It's a great little Italian restaurant at the beach.

Lasagna Rolls

Hey Y'all!

I mentioned in my last post that I would share the recipe on my lasagna rolls.  It did not take long to prepare and I actually like it better than having lasagna that lays flat.

Ingredients:
8 lasagna noodles
1 large jar of spaghetti sauce
1 lb ground beef
1 medium size container of Ricotta cheese
1/2 cup of graded Parmesan
2 cups of mozzarella
1 egg
2 tbspn Italian seasoning

Start by boiling your lasagna noodles in a large pot. I add a little of salt and olive oil to the boiling water. (tip: The olive oil helps to keep the noodles from sticking to each other.) Cook the noodles until they are cooked a little more than al dente. You want to them to be a little firm so they do not tear as you are rolling them.

As my noodles begin to boil I start to cook the ground beef in a sauce pan. Once the beef has browned, drain and set aside to cool a little.

In a medium bowl mix Ricotta, Parmesan, Italian seasoning, egg, & ground beef together until mixed well.

Preheat the oven to 350 degrees. In your casserole dish, spread a good amount of spaghetti sauce to the bottom. Take one of the drained noodles and lay across the counter/cutting board. Spread the Ricotta mixture along the noodle and begin to roll the noodle. Then place the noodle in the pan and line then down the pan. (I made 2 rows in a 8x12 casserole dish) Repeat the process until you have used all your noodles. Then add spaghetti sauce over the top of the noodle rolls. Sprinkle on graded mozzarella over the top. Bake for 30 minutes.

It's Friday Y'all!!

Here is my 5 on Friday!

1. 1st Day of Summer! Ugh, last time I checked first day of summer was back in May for us Floridans. Whoa it's hot ladies! The other day it reached 102 with the heat index. My Chloe girl has the right idea. We have been spending our days in the pool and working on our tan. She is looking so bronze. :)



2. Chick-fil-A salad! Need I say more? I hardly eat at fast food restaurants but the hubby was working and I did not feel like cooking so Chick-fil-a was my option. Chick-fil-a is the only drive thru I will consider and I ordered the Cobb salad, AH-MAZING! It just hit the spot.



3. Lasagna rolls - Last night I cooked lasagna rolls for the hubby and I. It turned out really good and I feel it was easier to make than your standard lasagna. I will post a recipe soon.

4. OPI silver nail polish - This is one of my favorite nail polishes. The name is DS Radiance. LOVE. LOVE. LOVE.




5. Origins lotion - There are two hand lotions that are my go to from Origins. They make my hands so soft and smell really nice. The Gloomaway Grapefruit body soufflé is really nice and has a settle citrus scent. Reminds me of summer. The Make A Difference as a clean smell with hardly any fragrance at all and is very creamy but does not feel thick.

2 Year Anniversary!

Hey Y'all!

Today is our 2nd year anniversary! Today I spent the day going through our wedding photos and going down memory lane. For us being thrown a curve ball 8 days before our wedding, the day was simply beautiful!

This morning the hubby made us breakfast and had roses waiting for me. Another sweet thing he did was share this sweet quote: "Pillow fights and cuddles. Tears and laughter. Frowns and smiles. Fights and make up. Arguments and agreements. Loneliness and togetherness. Ups and downs. Bad days and good days. We have been through all this but never thought of giving up on each other. Our life is full of sugar and spice, fire and ice, BUT everything nice. We have been through the best and the worst but no matter what comes up for us for the rest of our life, we are madly, deeply and crazily in love with each other. We are a die hard romantic couple. We are friends, we are lovers, we are best buddies, we are twin flames, yes we are soul mates." ~unknown~

God, I love this man and I am so blessed we found each other!

5 on Friday!

1. Monkey Joe's - I took Alivea and two of her little friends to Monkey Joe's on Monday. They had a blast! What a great concept to have indoor bounce houses so kids can burn their energy.

2. Monogram ring - My new favorite item this week is my monogram ring that I got from Marley Lilly. It is the Zara sterling silver ring had made in my initials of course. :)



3. Bathing suit - I only buy my bathing suits from two places, Target and Venus. I bought these bottoms at the beginning of summer and I love them! I already had a plain solid black triangle bathing suit top so I thought this would be a cute combination. You can get bathing suit here.



4. Girl time - We all need girl time! I had lunch with my good friend Amy to catch up on life, relationships and up coming travels. She's going to Australia y'all! Sounds like good fun!

5. Father's day - Since it is Father's day weekend, I think it is appropriate to say that I love this man! Though he is my step-father, I do not see him that way. This is why he is one of my favorite people. Happy Father's day to all this weekend!

Too Many Shades of Grey!

Hey Y'all!

The hubby and I have started on updating the outside of our home. While we have already done a few updates on the inside...we are ready to make our home reflect us. We bought our home in 2010 knowing we would have to do some updating so we started on the inside first. Our biggest update was to our laundry room. Y'all, I am not kidding when I say it was outdated. We had half linoleum half concrete on the floor and as we ripped up the linoleum, it reeked of cat urine...double yuck! Here is the before and after...

              

Here is our lovely too many shades of grey home. The top picture is before we got a new roof and the bottom picture is after we had the new roof installed.


Now we are moving onto colors that will brighten up the outside. Currently, we have chosen the colors on the far left as our new home color. Hopefully, this is a good choice because I am never a good judge in color when it is in the beige/tan family.

Hamburger!


Most Sunday's I watch a little girl who has been a part of my life for the past 4 years. She is a miracle baby story to say the least. Last Sunday we were sitting at her little table pretending eating fake food. She clearly set the roles in our make believe play with me being the mother and her being an older sister to her baby dolls. When I asked her if she preferred to eat chicken or hamburger our conversation went a little like this...

Me: Would you like chicken or hamburger?
A: um...I want hambooger.
Me: It's hamburger.
A: hambooger.
Me: No, it's ham. burg. er.
A: ham. boog. er
Me: say bur
A: bur
Me: ger
A: ger
Me: Ham-burg-er
A: Ham-burg-er

I proceeded to clap then laughed for a while because all I could think about was the scene from Pink Panther.
