I mentioned in my last post that I would share the recipe on my lasagna rolls. It did not take long to prepare and I actually like it better than having lasagna that lays flat.
Ingredients:
8 lasagna noodles
1 large jar of spaghetti sauce
1 lb ground beef
1 medium size container of Ricotta cheese
1/2 cup of graded Parmesan
2 cups of mozzarella
1 egg
2 tbspn Italian seasoning
Start by boiling your lasagna noodles in a large pot. I add a little of salt and olive oil to the boiling water. (tip: The olive oil helps to keep the noodles from sticking to each other.) Cook the noodles until they are cooked a little more than al dente. You want to them to be a little firm so they do not tear as you are rolling them.
As my noodles begin to boil I start to cook the ground beef in a sauce pan. Once the beef has browned, drain and set aside to cool a little.
In a medium bowl mix Ricotta, Parmesan, Italian seasoning, egg, & ground beef together until mixed well.
Preheat the oven to 350 degrees. In your casserole dish, spread a good amount of spaghetti sauce to the bottom. Take one of the drained noodles and lay across the counter/cutting board. Spread the Ricotta mixture along the noodle and begin to roll the noodle. Then place the noodle in the pan and line then down the pan. (I made 2 rows in a 8x12 casserole dish) Repeat the process until you have used all your noodles. Then add spaghetti sauce over the top of the noodle rolls. Sprinkle on graded mozzarella over the top. Bake for 30 minutes.
