5 on Friday!




I'm so happy it is Friday. This week has been crazy busy. I would really like to have a mental health day but that's not happening until Sunday. I would really like one since I feel like I am coming down with somethings. Being an allergy sufferer is no joke. On a brighter note, I am stopping in to share my top favorite things or things on my mind.

I am happy that I will be participating in a Spooky 5k Run next Friday at UCF. Go Knights! I have decided I am going to be Batgirl. Yes, I know kinda corny but I'm excited about it. I bought a batman 
t-shirt and got a batgirl tutu. Hopefully it is cooler because I'll be in all black.

I'm a sucker for cute journals. I have a travel journal but I came across this one and had to snatch it up. It has a nice soft leather bound cover that is stamped with different cities around the world. The other one I just loved the chevron print of grey and peach. You cannot beat a TJ Maxx find of $4.99.

I bought this hurricane and a taller one from Crate and Barrel. I love it. It is just so simple and classic. I also bought some simple salt and pepper shakers since ours were...not as nice. Who knew that something so simple can make a difference.

Weekend Recap

This weekend I woke up early and spent the day with the folks. We decided to take a trip to the local farmers market for some fresh veggies. I usually go in the cooler months because going to the farmers market in Florida during the summer is a torcher. It is just too dog-on hot! I was excited about going because I enjoy looking at all the veggies, baked goods and fresh flowers. Then when I saw the pumpkins and how cheap they were, I was beyond myself. 



That night we celebrated my mom's birthday dinner. We bought part snips from the farmers market then headed over to the butcher to select our meat option for the meal. We chose a top choice fillet and lemon cilantro asparagus. Then we went to Costco to get potatoes and lump crab meat. Everything was very delicious!


After dinner, we hung out around the brick oven and talked and laughed. Just simple good quality family time. 



Then Sunday, I hung out with this little one. She is such a ham. I am not sure if she is taping into her inner Ray Charles or Riding Miss Daisy. Either way, she is a cutie.

Easy Pumpkin Muffins

Happy Fall Y'all!

Today I had the urge to bake. Nothing makes your home smell more like fall than pumpkin muffins. I swear baking these muffins makes your home smell delicious. I received this recipe a few years ago from my graduate teacher. It is super simple and low cal! Therefore, there is no reason for you to feel guilty when eating them. 

These muffins only use 3 ingredients! You want to use a moist cake mix (ex. vanilla, yellow, or carrot cake), one regular size can of pumpkin and 1 tspn of pumpkin pie spice. I use a regular size muffin pan, cupcake liners, and a cake piping bag for easier clean up. 


In a bowl I mix the cake mix, pumpkin, and pumpkin pie spice together. The mixture will be thicker due to not using oil or eggs. There is no need to add them because they will be super moist.


Since the batter is thicker, I use the cake piping bag to fill the cupcake liners. Before I would use a spoon to dollop some batter into the pan but the muffins came out lumpy looking. Piping the batter in gives it a cleaner look. 


Heat in the oven at 350 degrees and bake the muffins for about 15-20 minutes depending on your oven temperature.

The Color Run

The ColoRun was one of those items that was on my bucket list. I have to say it is truly one of the happiest races on the planet. It was so much fun! It will be most likely one of those items that I may cross of my list a few times. It is probably the most organized 5k I have ever done as well. Everyone starts lining up at the start line and they send you out in sections. This helps with over crowding when running/walking and going through each color stations. I believe there were color stations each quarter of a mile. 

We traveled through stations redyellowblue, and orange. We did not get much yellow powder on us but we had enough of other colors to make up for it. For some reason you cannot help but smile or laugh going through the color stations. With that...the stuff tastes like chalk. At one point I looked up at my brother and he says, "Tiff, your teeth are blue." We just laughed. 

The after party is good fun as well. I tried to take a video of the colors flying through the air but I covered in powder so it was an epic fail. However, I did get a video of the party after the colored powder began to fly. Score!


I just noticed the lady's head was cut off in the bottom picture. I was trying out the panoramic picture view for the new iOS 7. ha ha! epic fail part 2.

5 on Friday!

Happy Fall Y'all! I can't say Florida is much cooler but this week there has been a little breeze in the air. I guess that is as close to fall as we are going to get this time of the year. The pool has already turned cool so swimming is a no go. I am ready to open the windows and let the cool breeze in!

I got my hairs cut and colored. Yep, it's too pricey to get one hair cut and colored so I got my hole head done. HA HA.

I went over to my parents last Sunday and my brother made pumpkin cookies. He used Krusteaz Pumpkin Spice Mix. OMG....just die and go to heaven why don't you? Amazing, melt in your mouth, yumminess!

I just bought all new dishes. Yes, this sounds very boring but I am very excited! I have a thing for white square plates. I'm a lines person so I really like this clean look. White plates make your food look so colorful and gives it a nice presentation. I pretty much bought this set from Crate&Barrel. The dinner plates I already bought years ago from Old Time Pottery so I needed the rest to complete the set. I ordered the appetizer plates, bowls, & coffee cups in the style Court.

Lately my skin has been...not as clear. So when it gets unruly then I like to use my favorite mask. I enjoy Origin products and I have found that their mask is the best I have ever used. It goes on cool and as it dries it cleans out all the nastiness in your pores. LOVE IT!

My other FAVORITE everyday use item is the GinZing eye cream from Origins. If you are someone who suffers from dark circles under your eyes then I recommend trying this product. You use very little of the cream and I use my ring fingers to apply under my eyes. It has caffeine in it so it help reduce puffiness and circles to make your eyes look brighter. Then after a few minutes, I add my concealer. It is a small tube but it lasts me a long time.
